The aim of the LICOCÈUTIC project is to research into obtaining both functional liposoluble extracts with a high carotenoid content (lycopene) and water-soluble extracts rich in hydrolysed protein from tomato processing waste. At the Catalan level, 10,000 tons of processed tomato are produced, from which 2000-4000 tons of waste are generated, which are currently valorised for animal feed or destined for fertiliser. The LICOCÈUTIC project aims to give added value to tomato processing waste by following a circular economy model and obtaining lycopene, which has great potential in both the food and beauty industries.
It is a circular economy project financed by the Waste Agency of Catalonia, in which the LEITAT technology centre also participates.
Obtaining liposoluble extracts, rich in lycopene, from the residues of tomato processing as a potential nutraceutical.
